The Art of Sipping Tea – We gather to deep dive into the universe of tea. To taste how the mountain slope changes the flavor of an oolong, or how 25 days in the shade bring umami to the Kyokuro. The tea plant, camelia sinensis has 220 varieties, and with each one their is another style of cultivation, and with each of these there is another style of processing, and of course each us have our own style of brewing. To being to know our way through this array of tea experiences we brew a pinnacle tea of each category. These are 6 (really special) teas. Each one is a rich experience of the senses. Discovering the honeysuckle astringency in an aged White or the amber fruit sunshine in a cup of a Long Kou ‘bug bitten’ Oolong. As we explore we will challenging each other in the art and game of the tea sommelier. This means expanding out palettes and our ability to articulate what we taste. We will also include aspects of non-religious ceremony, and some simple meditation. Socializing and fun will also abound.
